TURKEY IN PAPILLOTE WITH BUTTERNUT, CHEDDAR, THYME 
AND CINNAMON-FIG RELISH

I love to go to my friend's house in Paris for Thanksgiving : she used to live in America for a few years and since back (a dozen of years now), she inevitably organized every year, a yummy thanksgiving with Turkey her husband fetch in Rungis especially for at the opening time : 4 hours in the morning!!! I had to find MY way of doing it in a very easy manner. The papillote was the solution then. Seeing that we are in London, I added some very good Cheddar. Obviously, I had to put my French touch with thyme and fig relish. To finish this succulent dish, a christmassy feature with the cinnamon in the relish. Because, Christmas is definitely around the corner...If you cannot find fig relish, go for jam instead. The French brand "Bonne Maman" does a very good one (in large Tesco and Waitrose). For the butternut, I buy some frozen one. Why ? Because it spares me time in cutting it...(where, how...). In this form, it is terribly easy to cook it. You can find some nearly everywhere...

TURKEY IN PAPILLOTE WITH BUTTERNUT, CHEDDAR, THYME AND CINNAMON- FIG RELISH
A quick glance in your kitchen...

In your fridge
Turkey breasts
Butternut
Extra mature Cheddar

In your cupboard
Fig relish (or jam)
Dry thyme
Ground cinnamon
Shalllots
Baking paper
Olive oil

TURKEY IN PAPILLOTE WITH BUTTERNUT, CHEDDAR, THYME AND CINNAMON- FIG RELISH
Serve 4
4 turkey breasts 
400g 14 oz of frozen butternut squash  
4 slices of extra mature cheddar 
4 generous tbsp of fig relish
Few springs of dry thyme 
1 tsp of ground cinnamon 
200g 7 oz of sliced shallots 
4 squares of baking paper for the papillote (around 20cm each side)
Olive oil

Place the butternut in a microwavable recipient. Cover and cook on full power for 5 minutes.
At the same time, in a pan, fry the shallots for 2 minutes in a little bit of olive oil. 
Add the turkey breasts.
Cook for a further 5-7 minutes.
Pre-heat your oven to 200°.
In a bowl, combine the ground cinnamon with the fig relish. Set aside.
Place a tbsp. of relish and 1 tbsp of cooked shallots in each centre’s square.
Add a turkey breast and a slice of cheddar above.
Place some butternut pieces at the side.
Sprinkle with thyme. 
Repeat the same process for the 3 remaining papillotes.
Close the 4 papillotes.
Cook for 10 minutes…
