COURGETTES AND GOAT CHEESE FLAN
I think it exists as many courgettes flan recipes as many French people. Everybody knows courgettes flan and I am not sure it is in a positive way for some...When I was a little girl, the courgettes flan was method of eating your greens in a different manner (not sure it worked for everyone though...). I tried my own version with my children and it worked, they liked it !!! The goat cheese add a subtle and smooth texture to the courgettes. Obviously very easy to do and healthy! If you wish a meaty note, you can eat this courgettes flan with some Parma ham...
COURGETTES AND GOAT CHEESE FLAN

In your fridge
Eggs
Crème fraîche
Courgette
Goat cheese
Grated Emmental
Parma Ham
In your cupboard
Flour
Onions
COURGETTES AND GOAT CHEESE FLAN
Serves 4-6
4 eggs
50g of flour
50cl of crème fraîche
2 courgettes (grated)
150g of fresh goat cheese
150g of onions (frozen for me)
70g of grated Emmental
Parma ham
Preheat the oven to 200°C.
Grease and line a rectangular tin.
Fry the onion in a
frying pan for 1-2 minutes with a little bit of olive oil.
Add the courgettes
and cook for a further 5 minutes.
Meanwhile, in a little bowl, beat the
crème, eggs, flour and goat cheese until smooth.
Pour the courgettes
into the tin then add the eggs mixture.
Sprinkle with the
grated Emmental.
Bake for 25-30
minutes.
Serve with the
Parma ham if you wish.
