AUBERGINE AND HONEY TARTE

Aubergine is such a versatile vegetable. We tend to associate it with Ratatouille but we can do so many yummy dishes with.  In summertime, it is lovely as a "caviar d'aubergine". Perfect when stuffed for an "aubergine farcie" (a mixture of vegetables with meat, stuffed in half an aubergine and cook in the oven for 20 minutes). Lovely in a flan or clafoutis, wonderful roasted and mix with a spring salad and my favorite way of cooking aubergine (apart from the caviar), is in a tarte (a pie). I ate this lovely one at a friend's table and it was very, very good indeed... I just add some honey. You know me, I have to change the recipe a little bit to propose it my way...
